Those are nice, especially if you do frequent electrical mods or need to disconnect the positive often. Once I do all my power mods, windows and locks, alarm, stereo, etc. I'm going to be putting in a resettable circuit breaker right at the battery so I'll just use that to disconnect power when I need to. As a safety feature a person could do a couple things to cut power in an emergency. One you could put a switch in the dash that tripped a relay which in turn would cause a direct short, causing the breaker to trip. Two, if you knew enough about the airbag wiring for the car, you could use a wire from that to trigger the relay, which would cut the battery when the vehicle was involved in an accident. Similar to the effect of the explosive charges that break battery connections on some german cars. You could also use that trigger to cut power to the fuel pump as a safety measure. But I'm digressing. :)

Yeah, it's actually a little better to switch the negative, less spark, which means less wear on the contacts.

SCCA requires it to be within reach of the driver AND outside parties. One of the drag race sanctioning bodies requires it to be exposed at the rear of the vehicle.

The item above is not for a race car.

that's a neat little contraption. would come in useful just popping a switch instead having to loosen\remove three nuts all the time. additionally, i suppose it would be helpful to the racer type who doesn't drive daily and wants to save the battery from going dead. but i'm just guessing. and yes, negative is the terminal you want to disconnect.
