I have a 2004 Sentra SE-R standard model (non V-Spec). Which has 195/55/16 Stock. I can only find the stock firestone and runflat tires. So I was wondering if I can change to a 205/55/16? Will my speedo change?

that's a very small change. won't really affect anything much.
