Does anyone know the size of the stock 300z (91 turbo) rotor size? Also will the Rotor/caliper combo fit under 15's? 16's? TIA

Answering your first question 11" diameter in the front. The Z comes with stock 16" and no it will not fit 15's in the front.

And now to anwer your second question yes I do.

I actually found out that the 300z swap will work under the 15" 240se rims. Bonus.
