Yeah find a custom hot rod shop and have them take some measurements. Also look forward to replacing you front suspension with some thing that wont make it a death trap to drive.

I do V8 conversions all the time with Chevy LUV trucks. They have the same type of torsion bar front suspension as the Nissan's. The suspension works great even with the weight of the V8. Just crank the torsion bars up a bit to compensate for the extra weight.

Look around over at www.nissanminis.com there are several v8 swaps running around over there. You could also look at www.4x4parts.com discussion board as I'm pretty sure there are a few 4.3 and v8 swaps there as well.

There is a manufactered mount kit available for the SBC but I'm not sure where. Just check those sights I'm sure someone will help ya out.
