Fans dont kick on unless defroster or ac is on

Hey everyone! this site is really great! alot of tech info! Now my issue has been going on for a couple of weeks ....My radiator fans dont kick when the engine gets hot - unless the defroster or ac is on....ive done some research and heres what has been done so far:
car: 2000 sentra 1.8
mods: just springs and rims
engine mods: bone stock

1. flush system, pressure test, new coolant
2. change water pump and thermostat all OEM
3. change 3 radiator fan relays - if theres more-pls advise..thx
4. hoses were inspected and had them all replaced to eliminate any leak issues - no leaks

I know im missing something.
Any knowlege or solutions will help!

just changed the coolant temp sensor....still no fans....

hmm great somthing I can work on at work! Yes...........

A couple of questions first.

When you unplug the temp sensor do the fans automatically come on?

And

Is your check engine light on? If so go get the codes read.

Lets go from there and see…….

i had the code cleared after i changed the temp sensor but then the light came back on with the code P1126.(same code i had previously) it reads manufacture fuel/air metering. i searched the web i found that the code could possibly mean something is up w/ the thermostat which i already changed! I havent unplugged the temp sensor to see if the fans kick on yet, but will do tommorow!
