There are a couple of other threads on "overheating", you may want to
Search for them and check them out (there are ideas like "sticking brake caliper pistons" in there).
When was the last time the cooling system was flushed & filled?
How are the hoses; any chance they're collapsing under load?
How does the coolant look? There's no evidence of oil in the coolant (or coolant in the oil), is there?
If it's only when going up hill, what happens if you park on an incline with the engine running? If it overheats only in that position that makes me think of air in the system.
