Angry Still overheating

Well I went on a nice camping trip this weekend. Went fine except for the end on the way up. It was about 300km but the last 12km was on a pretty nasty dirt road. The San took it like a champ until the end.
I went through a little puddle, and into first gear to go up a small rise, and at about 16-1800 rpm I heard ping-ping-ping. My fans don't kick on properly still, (only goes on for like ten second bursts) and wouldn't keep the heat down. The needle was only at like 3/4, so I was very surprised. I shut down, and we walked the last half kilometer, and I went back for it later.

The mechanic said today there's nothing he can do, except relay a switch so I can manually turn on the fan myself. He won't put another fan in the space for AC equipped cars, says that won't help. What will work?
I have basically replaced everything in the cooling system brand new, and the new engine only has 1200km on it. The hard cooling pipe on the back is still leaking a bit by the bung for the heater core. It is full of corrosion. Could this be causing my problems?

sludge build up inside the rad ?? can cause temps switch to malfonction ... are you sure the gage is working propêrly ?? radiator isnt corroded right ??

Here's the story. They cut the upper coolant hose when they put my engine back together, so it was too short, and it got a tear right at the band clamp near the thermostat. Started leaking/sucking in air.
The corrosion comes from the hard coolant pipe on the back of the block, which is totally shot. It also leaks/takes in air from the bung to the heater core on the same hard pipe. The system is not pressurizing enough to set off the fan switch, after a few hours due to coolant loss.
The radiator is beautiful, and new so that's not it. Sorry I wasn't clear the sludge is in the rad. cap and comes from the hard pipe I keep referring to.
I have no time to wrench between my thesis, and the swell, there's no daylight left for the car. They will make a new system of pipes for me today, and I will hopefully be on the road to catch some waves while the tide is still pushing.

Grit your teeth and keep the heater running and windows down Seriously though, my 87 overheats and that's about the only way it can lead a normal life..
