Yes you can remove the injector cooler. I did so with my 85 and didn't run into any hot start problems. As far as the defog and the digital guages, the ECU has nothing to do with either one. The digital guages are add-ons run off analog devices that aren't connected to the ECU. For instance, the speedometer is run by a standard speedo cable going to a pulse generator, which then feeds that info to the guage cluster.
You could also swap in the analog guage cluster into the 88. There's a whole section on it on Z-Bums website.
